To make delicious raisin cookies, prepare 200g of all-purpose flour (type number 11), 100g of plain butter (to keep at room temperature until soft).

Soaking raisins in warm water for about 15 minutes before processing will help the grape seeds become soft, not burning stiff when grilled. After softening the butter, use a drumstick to beat it with powdered sugar until the mixture turns pale yellow and fluffy.
Next, add egg yolks and vanilla and stir well. Strain fine wheat flour into the egg butter bowl, use a flat whisk to mix gently using the fold technique (stir from bottom to top) until the mixture is even.
Raisins after soaking need to be thoroughly soaked before mixing into the dough. Note that do not stuff the dough too thoroughly by hand, as it will easily cause the butter to melt. After mixing, divide the dough into small balls of about 15gr - 20gr, scour and press flat into a round shape.
When cooking, heat the oil-free frying pot to 160°C for 5 minutes to stabilize the temperature in the pot. Arrange the cake in a tray lined with parchment paper, note the distance between the cake pieces so that the temperature spreads evenly.
Bake the cake for the first time at 160°C for 10 minutes. Then, flip the cake surface and bake for the second time at 150°C for about 3-5 minutes until the cake is evenly golden on both sides.
After baking, cookies need to be cooled. When the cookies are completely cooled, store them in a sealed glass jar or zip bag to maintain their delicious and crispy taste for a long time.
