Preparation materials
500g of spareribs
15-20 quail eggs
2 shallots
2 cloves of garlic
1 scallion branch
1 chili if you like spicy food
fish sauce, seasoning powder, sugar, pepper, cooking oil, colorant
How to do
Step 1: Pre-processing ingredients
Wash pork ribs, chop into bite-sized pieces. Blanch ribs in boiling water for about 2-3 minutes to remove dirty foam, then wash again with clean water and drain.

Boil quail eggs until cooked, peel. Peel shallots and garlic, mince. Wash green onions, cut into pieces.
Step 2: Marinate ribs
Put ribs in a bowl, marinate with fish sauce, seasoning powder, a little sugar, pepper, shallots and minced garlic. Mix well and leave for about 20 minutes to let ribs absorb the spices.
You can add a little caramel to make the braised dish have a more beautiful brown color when finished.
Step 3: Braise ribs
Place the pot on the stove, add a little cooking oil and heat up. Sauté the remaining onions and garlic until fragrant, then add the marinated ribs and stir well until the ribs are firm.

Add filtered water or fresh coconut water to the pot to cover the ribs. Boil and reduce the heat, braise for about 20 minutes to soften the ribs and absorb the flavor.
Step 4: Add quail eggs and complete
When the ribs start to soften, put the quail eggs in the pot. Continue to braise for another 10-15 minutes until the braising water thickens, and the quail eggs absorb the color and spices.

Season again to taste. Before turning off the heat, add scallions, ground pepper and a few slices of chili if you want the dish to be slightly spicy.
Sweet ribs braised with quail eggs should be served when hot, eaten with white rice. The dish has soft ribs, fatty quail eggs, rich braised broth, suitable for a cozy family meal.
