Preparation materials
500g of spareribs
1/2 red bell pepper
1/2 onion
2 tomatoes
1 shallot
2 cloves of garlic
fish sauce, sugar, ketchup, seasoning, pepper, vinegar or lemon juice, cooking oil
How to do
Step 1: Pre-process ribs
Wash pork ribs, chop into bite-sized pieces and blanch in boiling water for about 2-3 minutes to remove dirty foam.
Then, wash again with clean water and drain. This step makes the dish fragrant and the sauce clearer.

Step 2: Marinate and fry ribs briefly
Put ribs in a bowl, marinate with a little fish sauce, seasoning powder, pepper and minced shallots for about 15 minutes.
Heat a pan with cooking oil, add ribs and fry briefly until the surface is slightly golden brown, then remove to a plate.

Step 3: Make a sweet and sour sauce
Wash tomatoes, chop finely. Cut onions and bell peppers into bite-sized pieces. Mince garlic.
Sauté garlic with a little cooking oil until fragrant, add tomatoes and stir-fry until soft, then add ketchup, sugar, fish sauce and a little vinegar or lemon juice to create a harmonious sweet and sour taste.

Step 4: Rim ribs with sauce
Put the fried ribs in a sauce pan, add a little filtered water and cook over low heat for about 10-15 minutes to soften the ribs and absorb the flavor.
When the sauce starts to thicken, add onions and bell peppers and stir quickly to keep the vegetables crispy.

Step 5: Complete the dish
Season again to taste and then turn off the heat. Sprinkle with a little ground pepper to make the dish more fragrant.
Sweet and sour ribs should be served when hot, eaten with white rice. The dish has soft ribs, rich sweet and sour taste and attractive colors, suitable for daily family meals.
