200ml Greek yogurt

100g blueberries

120ml coffee

80ml sunflower oil

4 eggs

30g fatty cocoa powder

1 package of baking powder

maple syrup

Note:

You can replace flour with flour from any other grain such as spelt, black barley, oatmeal, etc. It is better to keep part of the flour, even if you want to add another type, to make the cake more porous and softened.

You can replace sunflower oil with coconut oil, butter or vegetable butter. In this recipe, you should not use olive oil to make it because it can be too strong and hide the flavor of the cake.

You can use any sweetener instead of sugar such as: stevia, saccharin, ...

Finally, if you can eat it without being lactose intolerant, you can convert Greek yogurt to soy yogurt or almonds.

This delicious blueberry cake is a great sweet, sugar-free dessert choice for your whole family.

How to make sugar-free blueberry coffee cake:

First, heat the oven to 190oC (375oF).

In a bowl, add eggs and beat until foaming. Next, add the maple syrup and the previously melted oil or butter and stir until all the ingredients are combined.

Use a sieve to keep the dough from lumps and start adding the flour and fermentation to the mixture of the beaten eggs and butter.

Mix with a spoon until you have a uniform texture. Add cocoa powder and pre-mixed coffee to the mixture and mix well. Wash and clean the blueberries, remove the seeds and add them to the mixture.

Next, apply the fat to the cake pan and pour the mixture in. To complete, bak for 30-40 minutes and let it cool on the tray for a few hours so that the cake does not lose its shape or texture. It is important not to open the oven while the cake is blooming because you can make the cake out of air and bloom unevenly.

To know if the cake is fully cooked or not, you can use toothpick or skewer to store in the middle of the cake and see if the cake is dry. If not dry yet, bake for another 5 minutes and continue to bake until finished.

This recipe is very delicious with vanilla ice cream or cotton cream. If you want a healthier version, you can add nuts or fruits to complete the dessert.
