To make this dish, it is necessary to prepare about 400g of Udon noodles, 100g of lean pork, 1/4 of an onion, 1/4 of green, red and yellow bell peppers of each type, along with a few sliced garlic cloves. Slice pork thinly and marinate with oyster sauce, cornstarch, a little water, cooking oil, egg whites and leave for about 10 minutes to help the meat soften and retain its juicy after stir-frying.
While waiting for the meat to absorb the spices, gently wash Udon noodles and drain, cut onions and bell peppers into bite-sized pieces. Put a pan on the stove, add a little cooking oil and stir-fry the meat over high heat until just cooked, then pour onto a plate. Continue to use this pan to stir-fry onions for about 1 minute, add Udon noodles and stir well with a little salt for about 2 minutes, then remove.
Next, make the sauce by sautéing minced garlic with cooking oil until fragrant, then add oyster sauce, soy sauce, ketchup, sugar, pepper and about 100ml of broth or filtered water and stir well over medium heat until the mixture is slightly thick. Add stir-fried pork and stir quickly, then add Udon noodles with onions and bell peppers, mix well to make all ingredients absorb the sauce.
The finished product is a plate of hot Udon noodles with chewy noodles, rich pork, vegetables still retain their natural crispness and sweetness. The aroma of fried garlic blends with the light fatty taste of oyster sauce and the light taste of soy sauce to create an attractive dish, suitable for changing meals for the whole family on weekends. If you like spicy taste, you can add a little chili sauce or sprinkle ground black pepper on top before enjoying to make the dish richer and more fragrant.
