1. Lemon Herb Grilled Chicken
Ingredient
- 4 chicken thighs
- 2 tablespoons olive oil
- Juice of 1 lemon
- 5 ml dried oregano
- 5 grams dried basil
- 3 cloves of garlic (minced), salt and pepper to taste
- Take a large bowl, mix together olive oil, lemon juice, oregano, thyme, garlic, salt and pepper to make the dressing.
- Add four chicken thighs, coat with sauce, marinate and wait at least half an hour.
- Preheat oven to medium heat and grill chicken thighs for about 6 to 8 minutes on each side.
- Serve with steamed vegetables or salad.
2. Chicken and cauliflower fried rice
Ingredient
- 2 pieces of chicken breast (diced)
- 3 cups cauliflower rice
- 1 bell pepper (sliced)
- 1 small onion (diced)
- 50 ml soy sauce
- 15 ml sesame oil
- 2 cloves garlic (minced)
- 1 teaspoon ginger (minced)
- 2 green onions (chopped)
Making
- Heat sesame oil in a large pan, add garlic and ginger and cook until fragrant.
- Add diced chicken and cook until meat turns brown on all sides.
- Add bell pepper and onion, cook until soft.
- Stir in rice, cauliflower and soy sauce, cook for 5 - 7 minutes until everything is well combined and cooked through.
- Garnish the dish with green onions before serving.
3. Creamy Tuscan Chicken
Ingredient
- 4 pieces of chicken breast
- 15 ml olive oil
- 2 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes (chopped)
- Spinach
- 1/2 cup shredded cheese
- Salt and pepper to taste
Making
- Season four chicken breasts with salt and pepper.
- Heat olive oil in a large skillet and cook chicken until the pieces are browned on both sides. Remove the meat and set aside.
- Add garlic and fry in the same pan, wait until the garlic is fragrant.
- Pour in chicken broth and cheese, stir well until ingredients are blended.
- Add tomatoes and spinach, cook until done.
- Return chicken to pan, simmer in sauce for 5 - 7 minutes until fully cooked.
- Eat chicken with Tuscan sauce.
4. Avocado Chicken Salad
Ingredient
- 2 chicken breasts (cooked and shredded)
- 1 large avocado (diced)
- 1/4 cup onion (diced)
- 1/4 cup cherry tomatoes (halved)
- 30ml spoon olive oil
- Juice of 1 lemon
- Salt and pepper to taste, coriander for decoration
Making
- In a large bowl toss chicken breast with butter, onion and cherry tomatoes.
- Drizzle with olive oil and lemon juice then season with salt and pepper.
- Mix all ingredients together until well blended.
- Garnish with fresh coriander and enjoy.
