Why do we need to supplement vitamin D in winter?
Our skin naturally synthesizes vitamin D in response to sunlight, which is why it is called the sunshine vitamin.
But on winter days without sunlight, our bodies may not produce enough vitamin D. Therefore, supplementing vitamin D through diet in winter is extremely important.
How to make some dishes to help increase vitamin D in winter
Salmon marinated with curry leaves:
Ingredient:
- 2 salmon fillets
- 45ml oil
- 2 tablespoons spice mixture
- 10 grams of chopped curry leaves
- 20 grams chopped coriander
- Salt to taste
Making:
- Put the spice mixture, chopped curry leaves, coriander and a tablespoon of oil in a small bowl and mix well.
- Marinate the salmon fillets with this mixture and set aside for 10 - 15 minutes.
- Drizzle a little oil on a baking tray and grill the fish on each side for 5 minutes.
- By grilling salmon, the natural oils and nutrients of the fish are retained.
Cream of mixed mushroom soup:
Ingredient:
- 1 bowl of chopped mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 250ml vegetable broth
- 10 grams of watermelon seed powder
- Salt and pepper to taste
- Coriander for decoration
- 15ml oil
Making:
- Take a large pot, add oil and saute onions until they turn translucent.
- Add garlic and mushrooms, cook until mushrooms turn brown.
- Pour in vegetable broth, simmer for 15 minutes.
- Add watermelon seed powder and cook for another minute.
- Season with salt and pepper.
- Blend the mixture until smooth and serve hot, garnish with coriander.
Creamy Mushroom Noodles
Ingredient:
- 125 grams of wheat pasta
- 250ml almond milk or cashew milk
- 15ml olive oil
- 2 - 3 cloves garlic, minced
- 70 grams sliced mushrooms
- A pinch of oregano
- A handful of dried basil
- Salt and pepper to taste
Making:
- Boil the pasta until it is firm, drain and set aside.
- Heat olive oil in Vietnamese sausageo over medium heat.
- Add minced garlic and sliced mushrooms to Vietnamese sausageo and stir-fry for 3 - 4 minutes.
- Sprinkle with dried oregano and basil.
- Pour the plant milk into the Vietnamese sausageo and simmer until the mixture thickens.
- Season with salt and pepper to taste.
- Add cooked noodles to Vietnamese sausageo and cook for another 2 - 3 minutes.
- Eat creamy vegan mushroom noodles while they're hot.
