Si Muoi pickled mango is a combination of the sour taste of green mango, the characteristic sweet and salty taste of Si Muoi and the coolness of rock sugar. Housewives only take about 15 minutes to prepare and 4 hours to soak the mango to absorb the spices.
Regarding ingredients, prepare green mangoes (choose hard fruits to maintain crispness), sage, rock sugar, filtered water and a clean glass box.
In the preliminary processing step, soak green mangoes in diluted salt water, rinse several times with clean water and then dry thoroughly. Next, peel and cut the mango into bite-sized pieces.
Switch to the soaking water cooking stage, add rock sugar, sage and enough filtered water to the pot. Turn on the stove and simmer over low heat, stir well until the rock sugar is completely dissolved, then turn off the heat. An important requirement is to let this rock sugar water mixture cool completely before soaking so that the mangoes do not become mushy.
Arrange the chopped mangoes in a glass box. Pour the cooled soaking water mixture directly into the box to cover the entire mango portion. Close the lid tightly and put it in the refrigerator compartment to soak for about 4 hours.
After a period of soaking, the mango will evenly absorb the salty and sweet taste of xí muội, maintaining its crunchy texture and can be taken out and enjoyed immediately. Please note to store the mango box in the refrigerator compartment for gradual use.
