How to cook attractive banh chung soup for weekend meals

Housewives can refer to how to cook eggplant soup quickly and do not take much time to change the taste of the weekend dish.

Accordingly, choose 3 - 4 eggplant (vettel); 200gr pork belly (should choose meat with both lean and fat); 3 - 4 tofu; 2 - 3 tomatoes; spices such as perilla, betel leaves, green onions; suddenly grated or vinegar, shrimp paste (depending on taste), turmeric powder, dried onions, fish sauce, sugar, seasoning seeds...

First, wash the eggplant, remove the trunk, and cut the pieces to taste. To prevent the eggplant from getting darker and reduce the juice, soak in a bowl of diluted salt water for about 15 minutes, then remove and drain.

The pork belly must be washed thoroughly, thinly sliced to taste. Tofu slice into squares or triangles and fried until golden brown. Wash tomatoes, slice into areca sauce. Peel and reduce the onions. Pull up and wash the herbs ( perilla, betel leaves, green onions). filter through a sieve to get smooth juice.

Squeeze the pot onto the stove, add a little cooking oil and fried onions. Next, add the pork belly to the tray until it is hunted and slashed. Continue to stir-fry the tomatoes, add a teaspoon of turmeric powder to create an attractive color. When the tomatoes are soft, season with a little shrimp paste to enhance the characteristic aroma.

Add the eggplant to the pot, stir gently for about 2 - 3 minutes to absorb the spices. Pour in enough water to cover the ingredients. Bring to a boil and reduce the heat to continue simmering for about 5 minutes, season with fish sauce, seasoning seeds, and sugar to taste for the family.

Add the fresh juice to the pot, the sourness can be adjusted according to your preference. Boil for about 7 more minutes until the beef and the meat are cooked until soft. Finally, add the fried tofu and all the chopped herbs to the pot, stir well and turn off the heat.

A family meal on the weekend will be perfect when family members enjoy the eggplant soup with hot rice.
