Spicy Italian Sausage is one of the familiar and especially favorite dishes of Italy.

Prepare some ingredients including 1kg of ground pork (should choose shoulder or belly to have an even ratio of lean and fat); a little small intestine; 40gr minced garlic; 20gr spicy chili powder; 10gr fennel seeds; 5gr ground black pepper; 10gr fine salt; 10gr sugar; 10gr paprika powder; 50ml red wine and 40ml olive oil.
Before cooking, prepare the ingredients by washing the small intestine under cold water, turning it inside out and removing excess fat. Soak the intestine in warm water mixed with a little vinegar for 30 minutes to remove the smell. Rinse with clean water and let dry.
Mix ground pork with minced garlic, hot pepper flakes, cumin seeds, black pepper, sea salt, sugar and paprika in a large bowl. Continue adding red wine and olive oil and mix well until the spices are well incorporated into the meat.
Cover the bowl of meat with plastic wrap and leave in the refrigerator for about 1 hour to absorb the spices.
Next, stuff the meat into the intestines gently to avoid letting air in. When finished stuffing, use string to divide the sausages into pieces about 10 - 15cm long.
Hang the sausages in a cool place for about 1 - 2 hours to dry the surface. Then, wrap the sausages in plastic wrap and leave them in the refrigerator for 12 to 24 hours before processing them into dishes.
