Ingredients and Spices
Main ingredients:
- Chicken wings 350g
- Spice A (Chicken marinade): Soy sauce, wine, 1 large spoon each.
- 1/2 teaspoon sugar, 1/4 teaspoon salt. 2 large tablespoons chili peppers.
Spices for sauce:
- Spicy hotpot seasoning 1 large spoon, sugar 1/2 small spoon, fragrant vinegar 1 small spoon.
- 5 cloves of garlic (sliced), 5 slices of ginger.
- 2 anise flowers, 15g dried chili peppers, 5g fennel peppers.
Preparation method
Step 1: Pre-processing and marinating
Cut chicken wings into small pieces. Add spices to chicken wings, mix well, marinate for about 15 minutes.
Step 2: Fry chicken
Put oil in a pan to heat, add chicken wings and fry. Keep the heat medium and low until the chicken wings are golden brown on both sides, then take them out and wait to use.
Step 3: Sauté the spices
Keep the oil in the pan, add ginger and garlic and sauté until fragrant. Continue to add red chili and peppercorns and stir-fry together to enhance the aroma.
Step 4: Sauté sauce
Pour chicken wings into the pan, add sugar, fragrant vinegar, hotpot seasoning (the water is about 1/3 of the meat).
Step 5: Om chicken
Simmer over high heat until boiling, then reduce to low heat, cover and steep for about 20 minutes. Then open the lid, simmer until the water is dry and thickens.
