300g chicken breast
3-4 dried wood ears
1 shallot or a little garlic
Scallions, cilantro
Olive oil or cooking oil
Fish sauce, light seasoning, pepper
How to do
Wash chicken breast, you can use diluted salt water, then slice it into thin bite-sized pieces. Marinate the meat with a little seasoning and pepper for about 15 minutes so that the spices absorb evenly.
Soak wood ear mushrooms in warm water until softened, cut off the hard stems, wash and shred. Mince shallots; wash scallions and cilantro, cut into pieces.
Place a pan on the stove, add about a teaspoon of olive oil. Sauté half of the shallots until fragrant, add wood ear mushrooms and stir-fry quickly for about 2 minutes, then pour onto a plate.
Continue using the pan, add a little oil if needed. Sauté the remaining shallots until fragrant, then add the chicken breast and stir well over high heat. Stir-fry for about 5 minutes, until the meat is firm and cooked. Do not stir-fry for too long to avoid drying the chicken breast.
Return wood ear mushrooms to the pan, stir well with chicken and season to taste. Finally, add scallions, cilantro, stir quickly and turn off the heat.
Chicken breast stir-fried with wood ear mushrooms should be used when still hot. The dish can be combined with brown rice, green vegetables or used separately if you want to reduce the amount of starch in the meal. Chicken breast provides a source of protein, while wood ear mushrooms supplement fiber, creating a feeling of fullness and contributing to making the menu more diverse.
