Sturgeon is a food rich in nutrients, containing high levels of Omega 3 and protein, which is very good for family health. However, the characteristic of sturgeon is thick, viscous skin and a darker fishy smell than ordinary freshwater fish. If not carefully processed right from the preliminary processing stage, the fishy smell will directly affect the flavor when preparing dishes.

Accordingly, housewives can refer to some ways to properly pre-process to effectively and quickly remove the fishy smell of tuna while still ensuring delicious fish meat.

Clean the viscous layer with hot water

The first and most important step is to clean the mucus on the outside of the skin. Boil a pot of hot water at about 60 to 70 degrees C and then slowly rinse it on the sturgeon's body. Immediately after that, use a razor to gently scrape and clean the white film as well as mucus clinging to the skin.

Careful oil treatment not only helps remove fishy odors but also helps fish retain a fresher flavor. However, please note not to use water that is too hot during cleaning to avoid ripening the outer skin.

Seed salt, fresh lemon disinfectant

After cleaning the slime, rub the fish body and inside the abdomen with granulated salt thoroughly to help effectively remove fishy odors. The antiseptic properties of salt combined with natural acid from lemon juice will neutralize odor-causing compounds.

Rub the salt and lemon mixture evenly for about 5 minutes on the outside and inside of the fish and then rinse thoroughly with cold water. This method not only cleans the fishy smell but also helps to firm the fish meat and keep it fresh longer during processing.

Deep deodorant with ginger and white wine

For large sturgeon, using white wine and crushed ginger will help effectively deodorize. Warm ginger when combined with white wine will help clean and remove the fishy smell in each piece of fish meat.

Housewives can soak the chopped fish in this mixture for about 10 minutes before marinating. The aroma of ginger will completely overwhelm the fishy taste, while creating a base flavor to help the dish become attractive and fragrant after cooking.

Rice water, unsweetened fresh milk

A small tip that is effective in removing fishy odors is to soak sturgeon in rice water or unsweetened fresh milk for about 15 minutes. The reason is that rice water contains ingredients that help absorb odors and deeply clean, while fresh milk has the ability to completely remove fishy odors and increase the richness of fish meat.

This method is especially suitable when preparing grilled sturgeon or making salad. After soaking, just take the fish out and pat dry with a clean towel, but do not wash it too thoroughly, it will help preserve the quintessential flavor of seafood.
