To make fried eggs with shrimp and zucchini, prepare 2 chicken eggs, 4 fresh shrimp (peeled, black thread removed), 1/2 zucchini and about 20g of carrots. Spices and herbs included include 1 onion, 5ml of traditional fish sauce, 10ml of cooking oil, a little salt and ground pepper.

Combining shrimp meat with zucchini not only increases the natural sweetness but also helps the fried egg become unique, maintaining softness without being dry and hard.

Accordingly, young shrimp after purchase needs to be cleaned, diced and marinated with a little salt for about 5 minutes to make the flavor richer. Wash zucchini and carrots, shred thinly. This is an important secret to help vegetables cook quickly and blend with the eggs when frying.

Next, heat a pan with cooking oil, add shallots and sauté until fragrant, then add shrimp and stir-fry briefly over high heat until lightly pink. In another large bowl, crack 2 chicken eggs, add a little fish sauce, ground pepper, and shredded zucchini and carrots, then beat the mixture to dissolve. Finally, mix the stir-fried shrimp into the egg mixture to prepare for frying.

Pour the mixture into a pan that is hot enough, use a spoon to spread the shrimp and vegetables evenly throughout the pan. Lower the heat and close the lid for about 2-3 minutes to make the bottom side golden and the top side cooker, which will help the eggs retain their natural moisture. Then, skillfully flip the eggs, fry for another 1 minute until both sides are golden and fragrant, which is satisfactory.

Fried eggs with shrimp and zucchini should be enjoyed while still hot with white rice. The rich sweetness of shrimp combined with the buttery taste of eggs and the coolness of zucchini will bring a nutritious dinner for the family after a long day of work and study.
