Greek yogurt is very popular with many people thanks to its superior protein content. This is a type of yogurt that has been separated from the water during fermentation. This dish has a fatty, mild sour taste, when combined with the sweet and fragrant taste of homemade fruit jams, it will create a perfect balance.
Housewives can personally prepare this dish with simple ingredients such as: 400gr of finished Greek yogurt with concentrate, 1 liter of unsweetened fresh milk (or whole milk to increase fat), 1 box of egg yogurt (about 100gr) for fermentation and 100-150ml of condensed milk depending on the sweet taste.
Necessary tools include a cooker, incubator (or rice cooker), filter, and clean towels (cloth).
For the fruit jam served, housewives need to prepare about 250gr of fresh fruit (such as watermelon, mango, strawberry...) and 100gr of white granulated sugar (reduce depending on the sourness and sweetness of the fruit).
Start by putting fresh milk and condensed milk in a pot, heat it over a fire of about 80 degrees C (seeing water vapor rising slightly), then turn off the heat, absolutely do not let the milk boil over. Let the mixture cool naturally to 40 - 45 degrees C, then add condensed yogurt and stir gently in one direction to dissolve evenly. Pour the mixture into a jar or pot, cover tightly and incubate for about 8 to 10 hours for the milk to solidify.
Prepare a large bowl, place the filter tray on top and line the tray with a bucket. Gently pour all the fermented yogurt onto the towel, tie the mouth tightly and place the whole bowl in the refrigerator compartment. The filtering time lasts from 4 to 8 hours, depending on the smoothness. The pale yellow whey juice will flow down, leaving the yogurt sticky and smooth on the towel.
While waiting to separate the water, make fruit jam. Wash the fruit, slice or grind briefly, then simmer on the stove with sugar over low heat. Stir well until the mixture thickens, the fruit is soft and fragrant, then turn off the heat and let cool.
Pour enough Greek yogurt into a bowl, pour a layer of shiny fruit jam on top or serve with grains (Granola).
