Coming to Dai An Khe village (Hai Thuong commune, Hai Lang district, Quang Tri province) in the early spring, the cold weather is filled with smoke from the red-hot kitchens. On this occasion, every kitchen here is red-hot all day long to cook cakes.

Dai An Khe village is considered a “cake barn”, providing Chung cake, Tet cake, Tay cake, It cake, of which the most special is Moon cake. Previously, Moon cake was only wrapped for Tet, but now it is ordered all year round.
Ms. Dao Thi Thanh Van (37 years old, living in Hai Thuong commune) said that her family has been involved in the baking profession for nearly 10 years. Ms. Van's family's bakery not only supplies the provincial market, but also often sends to Hanoi, Ho Chi Minh City, Da Nang and even to foreign countries such as the US, Dubai, and Laos.

“Everyone in the family knows how to make cakes, but it took 9 years to make this a career. During those 9 years, the family has had many customers, especially from abroad. They contacted to place orders and the cakes were sent by plane,” said Ms. Van.
According to Ms. Van, the moon cake her family makes is more delicious than cakes made elsewhere because the sticky rice used to wrap the cake is dyed green by the leaves of the Malabar spinach. When cooked, the cake crust turns light green, the green bean filling wrapped with fatty meat blends with the aroma of the Malabar spinach leaves, making the cake special.

Mr. Bui Ngoc Da (66 years old, living in Hai Thuong commune) said that the moon cake in Dai An Khe village is mostly green from the leaves of the Malabar spinach. In addition, according to the order, the cake can also be dyed orange from gac fruit, or purple from brown rice. "We only use leaves, fruits or rice to color the cake, absolutely do not use food coloring, so the quality of the cake is guaranteed" - Mr. Da shared.
Ms. Dao Thi Thu Huyen - President of the Women's Union of Hai Thuong commune said that banh tet in Dai An Khe village has been granted a Certificate of exclusive trademark registration by the Department of Intellectual Property. Realizing that banh tet making brings income, in 2019, the Dai An Khe Moon Banh tet Production Cooperative was established. The cooperative alone has created jobs for about 100 workers.
According to Ms. Huyen, people have actively used social networking sites to promote the product, so moon cake has widely reached domestic and foreign customers.
