What is red rice?

Red rice, also known as Rakthashalior Matta rice or Kerala red rice, originates from Kerala. It is a rich source of nutrients and is also an indispensable part of Indian cuisine. Red rice is rich in antioxidants and fiber, which can help lower cholesterol and improve digestion.
How to cook rice from red rice
Prepare:
- First, wash 125 grams of rice under running water until the water is no longer cloudy.
- Pick and remove sand and impurities mixed in the rice.
- Soak rice in water for at least 30 - 60 minutes.
How to cook:
- Put soaked rice with 375ml of water in the pot.
- Bring water to a boil and reduce heat to low.
- Cover the pot and cook for 20 - 25 minutes, or until the rice is cooked and the water is gone.
- Leave on the stove for about 5 minutes, then fluff the rice.
Some simple recipes with red rice
Red rice:
Ingredient:
- 125 grams of red rice
- 1 onion
- 2 tomatoes
- 50 grams green beans
- 1 carrot
- 1/2 green chili
- Ginger garlic powder, cumin seeds and spices (turmeric, red chili powder, garam masala) each 5 grams.
Making:
- Start by sauteing the onions in oil, then add the ginger, garlic and spices to the pan.
- Add chopped vegetables and stir-fry until slightly soft.
- Mix soaked red rice, add water and cook until done.
Red Rice Khichdi
Ingredient:
- 125 grams of red rice
- 50 grams of yellow mung beans
- 5 grams turmeric
- 5 grams of fennel seeds
- Asafoetida and ghee.
Making:
- Heat ghee in a saucepan and season with cumin seeds and asafoetida.
- Add the washed rice and bean mixture.
- Add water, turmeric and salt, cook until porridge is soft enough to eat.
