Israel's bread is made from a mixture of grains and sprouted beans such as wheat, barley, lentils, millet, etc. The sprouting process helps remove part of the anti-nutrient compound, making protein, vitamins and minerals easier to absorb.
According to nutritionist Aviv Joshua ( Integrative Nutrition Center, USA), this is a rare type of bread that provides complete protein, which means it has enough essential amino acids that the body needs. Eating a slice of Israeli bread every day helps the body maintain lean muscle mass, improves recovery after exercise and gives a feeling of fullness for longer, he said.
In addition, thanks to its high fiber content, Ezekiel bread helps stabilize blood sugar and reduce cholesterol absorption, thereby supporting cardiovascular health.
Rich in antioxidants, support anti-inflammation and aging
Natural antioxidants such as polyphenols, carotenoids and tocopherols in Israeli bread help neutralize free radicals, preventing cell and DNA damage, causing chronic inflammation and premature aging.
A diet rich in sprouting foods like Israeli bread can reduce the risk of chronic inflammation, heart disease and neurodegenerative disorders, says Dr. Angelica Bottaro, a clinical nutritionist in Toronto ( Canada).
Studies at Harvard University also recommend replacing a regular serving of bread with Ezekiel per day to increase the absorption of B vitamins, iron, magnesium, zinc and manganese, minerals that help increase energy and improve nerve health.
Although it is a healthy food, Israeli bread still contains gluten and is not suitable for people with wheat allergies or on a keto (low-carb) diet. Each slice of bread provides about 15g of carbohydrates, so it needs to be balanced in its daily serving.
