How to make grilled shrimp pasta with pesto sauce

Grilled shrimp pasta with pesto sauce is a dish that harmoniously combines the rich flavor of grilled shrimp and the richness of pesto sauce. This is the perfect choice and does not take too much time to change the taste of family meals on busy days of the week.

Housewives need to prepare ingredients including 400gr of Italian noodles (can choose spaghetti or linguine), 500gr of fresh shrimp (tiger shrimp or green prawn); 60ml of olive oil, 2 cloves of garlic; 15ml of lemon juice; 50gr of grated Parmesan cheese and some basic spices.

For the Pesto sauce, you will need 100g fresh basil leaves, 25g pine nuts (can be replaced with walnuts), 2 cloves of garlic, 30ml olive oil, 50g grated Parmesan cheese.

After preparing the above ingredients, wash the shrimp, peel, remove the head and tail. Marinate the shrimp with 2 tablespoons of olive oil, minced garlic, salt, pepper and lemon juice. Let the shrimp absorb the spices for about 15 minutes while preheating the oven to 200°C.

Place shrimp on a baking sheet lined with foil or baking paper and bake for 8-10 minutes until both sides are cooked through.

Toast the pine nuts in a pan without oil over low heat until golden brown and fragrant. Next, add the basil leaves, toasted pine nuts, garlic, Parmesan cheese, salt and pepper to a blender and blend until smooth. Add the olive oil and continue blending until the mixture reaches a smooth consistency.

Bring water to a boil in a large pot, add a pinch of salt and cook the noodles for 8-10 minutes until they are al dente and slightly chewy. Once cooked, drain and rinse under cold water before tossing the noodles with 1 tablespoon of olive oil to prevent them from sticking.

Mix the noodles with the prepared pesto sauce and place the noodles on a plate, arrange the grilled shrimp on top. Sprinkle with grated Parmesan cheese and some fresh basil leaves for decoration. The grilled shrimp pesto pasta should be enjoyed while it is still hot to fully experience the flavor.
