Tom Yum Soup with Oyster Mushrooms is a dish with fresh ingredients along with the sour and spicy flavor and aroma of lemon leaves and vegetables creating an attractive dish.
This is an ideal soup to enjoy on cold days, bringing lots of nutrition to family members.
To make this Tom Yum soup, housewives need to prepare 250g of oyster mushrooms; 500ml of chicken or vegetable broth; 2 tablespoons of Tom Yum chili sauce; 1 lemon leaf; ½ teaspoon of brown sugar; juice from ½ lemon; 2 - 4 red chillies; 2 tablespoons of Thai fish sauce; 8 cherry tomatoes; coriander and fresh lemon.
Next, clean the oyster mushrooms by cutting off the stem and cutting into 4cm pieces. Boil 500ml of chicken or vegetable stock in a large pot, add 2 tablespoons of Tom Yum chili sauce, add chopped kaffir lime leaves and stir well.
Reduce heat and let the broth simmer for about 3 minutes, taste the broth to adjust seasoning to personal taste. If the broth is too sour, you can add a little brown sugar to balance the flavor.
Conversely, if you want to add more sourness or spiciness, you can add lime juice and fresh chili. Additionally, fish sauce can be added for extra saltiness if needed.
When the broth is flavorful enough, add the oyster mushrooms to the pot and cook for about 5 minutes until the mushrooms are soft but still retain their crunchy sweetness. Once the oyster mushrooms are cooked, add the halved cherry tomatoes to the pot and cook for about 5 more minutes.
Before turning off the stove, sprinkle some fresh coriander leaves on top and ladle the Tom Yum soup into bowls, add a fresh lemon wedge for a sour taste and enjoy.
