Tofu is one of the ingredients that can be processed into many diverse dishes. In particular, sweet and sour stir-fried tofu with sweet and sour sauce will be a new variation, helping to make it more attractive for family meals.
The combination of the richness of yellow fried tofu, the crunchy texture of fresh bamboo shoots and the rich flavor of spicy, salty and sweet sauce will bring an unforgettable culinary experience.
To make this dish, housewives need to prepare 2 - 3 tofu; 300gr fresh bamboo shoots; 1/2 onion; 2 purple onions; garlic; green onions and coriander.
For the sauce, you will need sugar, rice vinegar, soy sauce (or vegetarian fish sauce), eggplant soy sauce, chili sauce.
When buying fresh bamboo shoots, remove the outer shell and remove the old roots. Slice the bamboo shoots thinly or stripped them. Then fill with water and boil for about 15 - 20 minutes, then rinse with cold water. Repeat this process 2-3 times until the bamboo shoots are no longer bitter.
Tofu is cut into bite-sized squares. To prevent the beans from breaking, fry the sides evenly. Squeeze the pan of oil onto the stove, when the oil is hot, fry the beans on the fire until they turn golden brown, then remove them to drain the oil.
The onions need to be washed and sliced into squares. The purple onions and garlic are peeled and minced. Wash the green onions and corn and reduce them.
Prepare a small bowl, add 2 tablespoons sugar, 2 tablespoons vinegar, 2 tablespoons soy sauce, 1 tablespoon eggplant soy sauce, 1 tablespoon chili soy sauce and 4 tablespoons filtered water. Stir the mixture until the spices are dissolved.
Squeeze the pan into the stove, add a little cooking oil and saute the minced garlic. When the onions have smelled, add the onions and stir-fry quickly for about 1 to 2 minutes. Next, add the boiled fresh bamboo shoots and stir-fry together, season with a little seasoning and stir-fry well for about 3 minutes until the bamboo shoots are absorbed by the spices.
Finally, add tofu to the pan, drizzle the sweet and sour sauce and stir gently to make the beans and bamboo shoots mixed well in the sauce. Simmer over medium heat for about 3 - 5 minutes until the sauce thickens, absorbed evenly into the bamboo shoots and tofu.
Season to taste for the last time, sprinkle some green onions and ground pepper and turn off the heat. Add sweet and sour stir-fried tofu to a plate and serve with hot rice.
