Peel the fresh longan, remove the seeds and keep the fruit intact so as not to break it. If you use a canned label, rinse with clean water to remove the harsh sweetness. Sliced almonds need to be roasted until golden on a pan without oil.
Add the eggplant, longan and cool sugar water to a small bowl. Add ice cubes and sprinkle some roasted almonds on top. You can decorate with mint leaves or a few slices of fruit as desired to make the sweet soup more attractive.
