Braised pork ribs with quail eggs

Ingredients include 500g of pork ribs, 15-20 quail eggs, dried onions, garlic, fish sauce, sugar, seasoning granules, pepper and caramelized water.
Cut pork ribs into bite-sized pieces, blanch in boiling water and wash thoroughly. Boil quail eggs until cooked, peel. Marinate ribs with fish sauce, seasoning powder, sugar, pepper, minced shallots and garlic and caramelized water for about 20 minutes to allow spices to absorb evenly.
Sauté shallots and garlic until fragrant, add ribs and stir-fry until firm, then add water approximately to the rib surface. Bring to a boil, then reduce heat and braise for about 15 minutes. Continue to add quail eggs and braise together. Season again, simmer until ribs are soft, eggs absorb the seasoning and the braising water thickens.
Snail stir-fried with turmeric
Stir-fried snails with turmeric bamboo shoots have the characteristic aroma of turmeric, combined with the crispness of the bamboo shoots and snail meat, creating a rich stir-fried dish for the meal.
Ingredients include 300g of clean snail meat, 300g of fresh bamboo shoots, fresh turmeric, perilla leaves, scallions, chili, fish sauce and seasoning powder.
Housewives need to wash the snails thoroughly, blanch them briefly in boiling water and drain. Marinate the snails with a little seasoning and turmeric water. Fresh bamboo shoots need to be boiled thoroughly, change the water 1-2 times to reduce bitterness and remove natural toxins in the bamboo shoots. Then rinse thoroughly and drain.
