With just a few familiar ingredients and less than 30 minutes of preparation, you can cook a hot, delicious sweet corn soup for the whole family.

Secrets to creating smoothness for soup

Sweet corn soup is a familiar dish loved by many people thanks to its light, easy-to-eat and nutritious taste. However, many people have difficulty cooking because the soup is too thin or too thick, reducing the attractiveness of the dish.

The special feature of this recipe lies in the use of two different pieces of corn. One part is ground to create a natural smooth soup base, the other part keeps the seeds to create crispness when enjoying.

Instead of using fresh cream, minced corn helps the dish still have light fat and retain its natural sweetness. This is also the reason why the soup has a soft texture but does not feel greasy.

To enhance the flavor, you can add a little minced ginger, white pepper and a few drops of white vinegar. This combination helps the dish have a light sweetness, slightly spicy and more balanced taste.

Simple how to do it at home

Ingredients for 4 people include 2 cups of sweet corn kernels, 4 cups of vegetable broth, 1 tablespoon of cornstarch mixed with water, 1 teaspoon of minced ginger, salt, white pepper, sugar, white vinegar and scallions.

First, divide the amount of corn in half. Grind half with a little water, keep the remaining seeds.

Boil vegetable broth with minced ginger. When the broth simmers slightly, add the ground corn and whole corn to the pot, stir well. Season with salt, white pepper and a small amount of sugar to taste.

Cook for about 8-10 minutes until the corn is soft. Then, slowly add the cornstarch dissolved in cold water to the pot, stir continuously to avoid clumping. When the soup reaches the desired thickness, add white vinegar and turn off the heat.

Scoop the soup into a bowl, sprinkle scallions on top and serve while hot.

Some family chefs share that the most common mistake is to pour corn flour directly into hot water, causing soup to clump. Therefore, corn flour always needs to be dissolved in cold water before use.

In addition to sweet corn, cooks can add carrots, mushrooms or peas to increase fiber and nutrients. The dish is also very suitable for serving with toast or crispy fried noodles.

With simple ingredients, low fat and fast processing time, sweet corn soup is a suitable choice for a light lunch or dinner for the whole family.
