Pumpkin soup
Ingredients: 200g pumpkin, 1 onion, 1 tablespoon olive oil, 500ml vegetable stock, salt, pepper.
Peeled pumpkin, chopped, sliced onions.
Saute the onions with olive oil, add the pumpkin, stir-fry and pour the broth over to cook.
Blend until smooth, season with salt and pepper to taste.
Enjoy the heat to feel the natural fatty aroma.
Tomato soup
Ingredients: 3 ripe tomatoes, 1 purple onion, 500ml broth, 1 tablespoon olive oil, salt, pepper.
How to do:
Wash tomatoes, chop them. Southampton purple.
Saute the purple onions with olive oil, add the tomatoes and stir-fry until soft.
Pour in the stock, boil for 10 minutes and blend until smooth.
Season to taste, serve hot.
Broccoli Soup
Ingredients: 200g broccoli, 1 small potato, 500ml stock, salt, pepper.
How to do:
Wash the broccoli, peel the potatoes, cut into small pieces.
Boil the potatoes and broccoli, puree with the stock.
Season to taste, serve hot.
General vegetable soup
Ingredients: 1 carrot, 1 sweet potato, 100g pumpkin, 500ml stock, salt, pepper.
How to do:
Peel the vegetables, cut into small pieces.
Boil the ingredients with the stock.
Blend and season to taste.
You can add coriander or green onions to enhance the flavor.
Lentil Soup
Ingredients: 100g red lentils, 1 onion, 1 tablespoon olive oil, 500ml broth, salt, pepper.
How to do:
Wash lentils, steep for 30 minutes.
Saute the onion with olive oil, add the lentils and the broth and cook until done.
Blend and season to taste.
