Why mushrooms are rich in vitamin D
Mushrooms are a good plant source of vitamin D because they produce their own vitamin D when exposed to UV light. The human body produces a form of vitamin D called D3 (cholecalciferol), while mushrooms produce D2 (ergocalciferol). Both forms of vitamin D can increase circulating vitamin D levels.
Vitamin D content also depends on the type of mushroom. But wild mushrooms that have been exposed to sunlight tend to have more vitamin D than commercially grown ones.
How to make mushroom rolls
To make mushroom rolls, you need to make 2 parts: mushroom rolls and filling for rolls.
Ingredient:
For the mushroom rolls:
- Flour: 125 grams
- Arrowroot powder: 10 grams
- Baking soda: 1.5 grams
- Ghee or butter: 2.5 grams
- Salt (to taste)
For the filling:
- Fresh chopped mushrooms: 250 grams
- Chopped onion: 10 grams
- Minced garlic: 5 - 7 cloves
- Black pepper powder: 1.5 grams
- Coriander powder, fennel: 1.5 grams
- Kasuri methi: 5 grams
- Fresh cream: 30ml
- Fresh chopped coriander leaves: 10 grams
- Ghee and butter: 10 grams
- Salt to taste
For the mushroom rolls:
Step 1: Mix flour, tapioca starch, baking soda and salt into a soft dough.
Step 2: Cover the dough with a wet cotton cloth and let it rest for about 1 - 2 hours.
Step 3: Then roll the dough into a ball and roll it as thin as possible.
Step 4: Place the pan on the stove, when the pan is hot, put the cake in and fry both sides until cooked.
Step 5: Spread ghee or butter on the hot bread and set aside.
For the filling:
Step 1: Place the pan on low heat and add ghee or butter.
Step 2: When the mixture is hot, add ginger and onion and stir-fry.
Step 3: Next, add coriander, cumin powder, fenugreek and black pepper powder. Mix well and cook for 30 - 40 seconds.
Step 4: Add mushrooms and salt and cook for 1 - 2 minutes.
Step 5: Finally, add cream and coriander leaves and mix well.
How to roll the cake:
Step 1: To prepare the roll, place the mushroom filling on the prepared pastry. You can also add cream on top if desired.
Step 2: Roll the cake tightly, cut into 2 - 3 pieces and enjoy.
