1. Tomato salad
Ingredient:
- 2 diced tomatoes
- 1 sliced cucumber
- 1 thinly sliced red onion
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper, fresh basil leaves
How to do it:
- Put tomatoes, cucumbers, and onions in a bowl and mix well.
- Drizzle olive oil and lemon juice over the salad mixture.
- Season with salt and pepper, then mix well.
- Decorate with fresh basil leaves and enjoy.
2. Tomato sauce for dipping lettuce
Ingredient:
- 4 chopped tomatoes
- 1 finely chopped onion
- 2 chopped garlic cloves
- 2 cups of water
- 1 tablespoon olive oil
- Salt, pepper, fresh parsley or basil to decorate
How to do it:
- Heat olive oil in a pot over medium heat, then saute onion and garlic until soft.
- Add chopped tomatoes and cook for 5 minutes.
- Pour in filtered water, season with salt and pepper, simmer for 10 minutes.
- Use a hand blender to blend the mixture until smooth.
- Garnish with fresh parsley or basil and serve while still warm.
3. Tomato juice
Ingredient:
- 4 ripe tomatoes, finely chopped
- 1 stalk of celery, finely chopped
- 1/2 cucumber, peeled and chopped
- 1 teaspoon apple cider vinegar
- Salt, pepper
How to do it:
- Put chopped tomatoes, celery, and cucumbers into the blender.
- Blend until smooth then filter through a sieve.
- Add apple cider vinegar, salt, pepper to taste and enjoy.
