The "Phu Quoc Traditional fish sauce cuisine" contest has 12 participating teams, the teams are professional and non-professional chefs from restaurants, hotels, and eateries in Phu Quoc City (Kien Giang). Each team will have 1 main kitchen and 1 assistant kitchen. The teams went through 3 rounds, processing round, decoration round, and delicious dishes with fish sauce presentation round.
3 dishes are prepared using Phu Quoc fish sauce as the main spice, within 120 minutes. The judges then evaluated and judged the dish based on the following criteria: preparation method, hygiene and nutritional value.
Mr. Huynh Hong cum - Kien Giang Province chefs Association said: "I have participated in many competitions of Kien Giang Province chefs Association, but this time, more special is using traditional fish sauce from Phu Quoc as the main spice. I feel honored to not only make dishes but also hope that delicious dishes when enjoyed by domestic and foreign tourists will contribute to promoting the traditional Phu Quoc fish sauce brand".
With their ingenuity and sophistication, the chefs have taken advantage of Phu Quoc's delicious seafood ingredients to harmoniously combine with many types of spices but still highlight the dish's main ingredient with fish sauce.
The contest also attracted many people and tourists to watch and cheer, creating a joyful and exciting atmosphere. Ms. Dao Ngoc Huong, a tourist from Ho Chi Minh City, said: "Phu Quoc is known as a beautiful pearl island of Vietnam, not only with a beach with white sand, clear blue waters, but also known as a "culinary paradise" with countless delicious specialties. I really like Phu Quoc seafood and when eaten with the traditional fish sauce of the island, it is very delicious, rich, making the dish more delicious.
This culinary competition with the theme "Phu Quoc traditional fish sauce cuisine" is not only a place for chefs and fish sauce producers to show their talents, but also an opportunity to honor traditional culinary cultural values, promote the image of Phu Quoc fish sauce to domestic and international friends.
