However, one of the biggest challenges for growers and consumers is that the fabric is very perishable after harvest, after only 2-3 days at normal temperatures, the fabric has begun to thicken, leak water, ferment or melt.
Here are the secrets to preserving seaweed that have been proven effective.
Refrigeration
According to the Food and Agriculture Organization of the United Nations (FAO), seaweed should be stored at a temperature of 2-5°C to prolong its freshness by 3-4 weeks.
In low temperature conditions, the respiratory rate of the fruit decreases, inhibiting the activity of damaged microorganisms.
The fabric is stored at 3°C with a moisture of 90-95%, retaining color, sweetness and crust for up to 28 days without chemicals.
Note, absolutely do not let the fabric come into contact with water before putting it in the refrigerator. Wrap the fabric in a fishing bag or paper bag with a hood to avoid steaming and moisture accumulation.
Using the adjusted atmospheric mattress (MAP)
This is a modern technology that is being applied in the preservation of exported fruits. MAPangs have the ability to regulate the ratio of oxygen and CO2 around fabric, helping to slow down the ripening process and reduce the growth of microorganisms that are addictive to air.
MAP can increase fabric storage time by 3 times compared to regular plastic bags, while retaining higher levels of vitamin C and polyphenols.
Soak in hot water quickly
This method has been shown to slow down the shading process and prevent mold.
Soak the fabric in hot water 50°C for 3-5 minutes, then cool immediately with cold water, which can kill microorganisms on the surface without affecting the quality of the fruit.
This is a simple technique, suitable for households or small sellers.
Store fabric in a dry, airy environment if there is no refrigerator
If there are no conditions for cooling, the fabric should be stored in a cool place, away from the sunlight, and not compacted.
Do not leave fabric in closed containers or airtight plastic bags because they can easily create moisture and give off fungi. Using a breathable basket and lightly covering it with a thin cloth towel is a simple way to keep the fabric fresh for another 2-3 days.
Processing and freezing fabric for long-term preservation
For those who want to keep the fabric for longer than a few weeks, the best way is to peel, remove the seeds, remove the pulp and freeze. According to the USDA (US Department of Agriculture), fabric implements after freezing at -18°C retain up to 80% of their nutrients and flavor for 6 months.
This method is very suitable for making smoothies, juices, sweet soups or fabric tea all year round.
