To prepare the dish, housewives need to prepare about 300g of winter melon, 200g of mushrooms or straw mushrooms, a sprig of shallots, scallions, coriander and basic spices such as vegetarian seasoning, salt, sugar and ground pepper.

Winter melon, after peeling and removing the seeds, wash thoroughly and cut into bite-sized pieces. Wash the mushrooms quickly with water to maintain crispness, then cut them in half or thick slices. Next, add about 1 liter of water to the pot, bring to a boil, then add winter melon and cook for about 5-7 minutes until the winter melon turns transparent and just soft enough. Season with vegetarian seasoning, salt and sugar to taste for the family, finally add scallions, coriander and sprinkle with a little ground pepper to make the soup more attractive.

To make the soup more delicious, winter melon should not be cooked for too long because it can easily make the winter melon soft and lose its natural sweetness.

In addition, you can add a few thin slices of ginger to make the broth more fragrant and create a comfortable feeling when enjoying.
