Preparation materials
300g winter melon
200g fresh shrimp
2 shallots
2 scallion branches

How to do
Step 1: Pre-processing ingredients
Peel winter melon, remove the seeds and then slice or cut into bite-sized pieces.
Peel shrimp, remove heads and pull back strings and wash them. You can gently pound or mince shrimp to make the soup sweeter.
Peel shallots, mince. Wash shallots and cilantro, cut into small pieces.

Step 2: Marinate shrimp
Put shrimp in a bowl, add a little fish sauce, seasoning powder and pepper and mix well.
Marinate for about 10 minutes to make the shrimp absorb the spices and be more fragrant when cooked.

Step 3: Stir-fry shrimp
Place the pot on the stove, add a little cooking oil and sauté shallots until fragrant.
Add shrimp and stir-fry quickly until it turns pink and fragrant.

Step 4: Cook winter melon soup
Pour filtered water into a pot and bring to a boil. When the water boils, add winter melon and cook for about 5-7 minutes until the winter melon is just soft.
Season again to taste. Do not cook pumpkin for too long to maintain the purity and natural sweetness.

Step 5: Complete the dish
Add scallions and cilantro and turn off the heat.
