Candy made from vegetables is a snacking choice favored by many women and children because of its delicious taste, nutritional supplement and ease of eating more green vegetables.
Many families make candy at home to ensure quality, because refined products or functional foods with vegetable ingredients often have high prices, making it difficult to verify the quality.
Cook Laura - owner of Joy Food Sunshine cooking channel - suggests a recipe for making delicious, colorful vegetable candy at home.
The ingredients to prepare are quite simple. Some fruits such as mulberry, beetroot, avocado, grape, peach... can create beautiful colors. You can choose fruits of your choice, except kiwi and pineapple. These two fruits contain the enzyme bromelain, which breaks down proteins in gelatin and prevents fruit candy from clumping.
Regarding juice, apple juice is recommended for its low sugar content, neutral flavor and color.
Other ingredients include gelatin, honey, vanilla.

Steps to make vegetable candy:
First, place the silicone mold on a large baking tray or wrap with candle paper and spread a thin layer of oil, set aside.
Make a fruit snack mixture: Red- grey, orange-orange fruits are used for coloring. Put fruits and vegetables in a large capacity blender to make the finished product smoother. This step should be ground with 1/4 cup of apple juice.
Vegetables can be selected according to your needs, mixing in a ratio of 4: 1 - between fruits and vegetables. All vegetables are ground raw, watered and the fiber is removed.
When the vegetables are finely ground, add honey and vanilla and mix well. Transfer the mixture to a small pan and stir well with gelatin.
Simmer over medium heat until gelatin dissolves (about 3 minutes). Make sure the mixture is not boiling.
When gelatin is added to the fruit/fruit mixture, the mixture will become cloudy. Simmer over medium heat until the mixture is no longer cloudy
Check the ripeness by adding a little mixture between the index and thumb and rubbing. If you feel a little rough, continue stirring. If the mixture is smooth, you can start pouring it into the mold.
While pouring the mixture into the mold, you should keep the pot on the stove so that the mixture is warm and cool slowly. Then, put the mold in the refrigerator to freeze for at least 2 hours.
Once the candy has matured, remove from the mold and enjoy.
Homemade vegetable candy can be stored in a sealed container in the refrigerator for up to a week.
