Foods containing carbohydrates when entering the body will turn into glucose, which can cause blood sugar to rise rapidly. This group includes white rice, vermicelli, taro, pumpkin, rice cakes, sticky rice and dishes with thick sauces.
Starch filling is quite common in Tet feasts. Fatty dishes slow down the digestion process, causing blood sugar to peak late and decrease slowly, which is not beneficial for blood sugar control.
Regarding the processing method, you can enhance the flavor with scallions, ginger, garlic, onions, mushrooms and spices instead of adding sugar. You should reduce the amount of sugar when coloring dishes. If you can steam or boil, you should limit frying. For soups, you can let them cool and then put them in the refrigerator to remove excess grease before using.
After meals, light walking, brisk walking or doing housework for 30 minutes to an hour can help lower blood sugar. During Tet days, blood sugar should be checked about 2 hours after meals. If the index is still high, it is necessary to reduce the amount of carbohydrates in the next meal and avoid sugary drinks.
