What is kombucha tea?
Kombucha is a fermented beverage made from tea, sugar, and a scoby (a co-existing culture of bacteria and yeast). Kombucha tea is a carbonated beverage, similar to beer, with a distinctive sour flavor due to the fermentation process.
The flavor of kombucha depends on how long the Scoby has been fermented and the type of tea or juice used during fermentation. Longer fermentation times will produce a more sour flavor, while different teas and juices will give you their own unique flavors.

How to make kombucha tea at home
Ingredient:
- Black or green tea bags
- Road
- Scoby
- A wide mouth glass jar
- A clean cloth or coffee filter
Making:
- Steep tea bag in hot water for 5 - 10 minutes, let tea cool completely before adding Scoby.
- Add sugar to cold tea and stir until dissolved.
- Carefully place the Scoby into the jar, making sure the Scoby is completely submerged in the tea.
- Cover the jar with a clean cloth or coffee filter to allow air to circulate while preventing contaminants from entering.
- Place the jar in a dark, warm place (about 21 - 24°C) for 7 - 10 days.
- Fermentation time may vary depending on temperature and desired flavor.
- After the desired fermentation time, taste the kombucha. If it is too sour, you can add a sweetener like honey or fruit juice. Once you are satisfied with the flavor, carefully pour the kombucha into a clean bottle, leaving a little liquid in the jar with the Scoby.
- To get the kombucha flavor you want, you can add fruits, herbs or spices to the bottled kombucha and let it ferment for another 1 - 2 days.
