1. Chicken meatballs with zucchini
Ingredient:
- 200 grams of ground chicken
- 1 egg
- 1/4 cup breadcrumbs
- 2 pumpkins
- 1 tablespoon olive oil
- 1 clove of minced garlic
- Salt and pepper to taste
Making:
- Preheat the microwave to 190 degrees Celsius
- Mix ground chicken, eggs, breadcrumbs, garlic, salt and pepper in a bowl.
- Shape into small meatballs and place on the baking tray.
- Bake for 15 - 18 minutes until the meat is golden brown.
- Heat olive oil in a pan, add shredded zucchini into the pan and stir-fry for 3 - 4 minutes.
- Then put the meatballs on top of the zucchini noodles and enjoy.
2. Lentil and spinach soup
Ingredient:
- 1 cup green lentils
- 4 cups of filtered water
- 1 chopped onion
- 2 chopped garlic cloves
- 2 cups spinach leaves
- 1 chopped carrot
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Making:
- Heat the pan then add olive oil, onion, garlic and carrots, stir-fry thoroughly until soft.
- Add lentils and filtered water and bring to a boil.
- Reduce heat and simmer for 25 - 30 minutes until lentils are tender.
- Add spinach and dill, cook for another 5 minutes.
- Season with salt and pepper then enjoy.
3. Chickpea and spinach curry
Ingredient:
- 1 cup cooked chickpeas
- 2 cups spinach leaves
- 1 chopped onion
- 2 chopped garlic cloves
- 1 teaspoon curry powder
- 1 cup coconut milk
- 1 tablespoon olive oil
- Salt and pepper to taste
Making:
- Heat olive oil in a pan, saute onion and garlic until soft.
- Add curry powder, mix well then add chickpeas and coconut milk, simmer.
- Add spinach and cook for 3 - 4 minutes until soft.
- Season with salt and pepper and enjoy.
