Stir-fried squid is a familiar dish in many families thanks to its simple processing method, fast cooking time and easy-to-eat flavor. Squid has a natural crispness and sweetness, when stir-fried with onions, bell peppers or celery, it will create a dish that is both beautiful and cookable.
Materials
To make stir-fried squid for 3-4 people, prepare about 500g of fresh squid, 1 onion, 1 bell pepper, a few sprigs of celery, scallions, minced garlic and a little ginger.
The seasoning includes cooking oil, fish sauce, seasoning granules, sugar, pepper and a little oyster sauce. The amount of seasoning can be adjusted according to the family's taste.
How to do
Clean the purchased squid, remove the bags, eyes and internal organs, then wash with clean water. You can use a little crushed ginger to remove the fishy smell. Gently squeeze the squid body diagonally and cut it into bite-sized pieces.
Boil a pot of water, blanch the squid quickly for about 30 seconds to 1 minute, then take it out to drain. This method helps the squid retain its crispness and limit the amount of water when stir-frying.
Peel onions, cut into wedges. Peel bell peppers, slice. Wash celery and scallions, cut into pieces.
Heat a pan, add cooking oil and minced garlic and sauté until fragrant. Next, add squid and stir-fry quickly over high heat. Season with a little fish sauce, oyster sauce, seasoning powder and sugar, stir well for about 1-2 minutes and then pour the squid onto a plate.
Continue to add onions, bell peppers and celery to the pan, stir-fry quickly over high heat. When the vegetables are just cooked, return the squid to the pan, stir well for about 30 seconds and then turn off the heat. Sprinkle with scallions and pepper.
Stir-fried squid meets the requirements when the squid is firm, crispy, not tough; vegetables still retain their color and light crispness. This dish should be served hot with white rice, you can add cucumber or green vegetables to make the meal more balanced.
To prevent squid from being tough, pay attention to the cooking time. Squid should only be stir-fried quickly over high heat and not cooked for too long. With this method, the dish can be completed in about 20-25 minutes, suitable for days when you need to prepare a quick lunch.
